Refined Vegetable Oils: The Cooking Staple That Deserves a Second Look

Canola, sunflower, soybean, corn oil these are the backbones of modern cooking. They’re affordable, neutral in flavor, and endorsed by decades of mainstream nutrition advice. They’re also extremely high in omega-6 fatty acids.

That’s not automatically a problem. Omega-6 is an essential fat your body needs. The issue is the ratio. Humans evolved eating a roughly 1:1 balance of omega-6 to omega-3. Today, the average American diet skews that ratio somewhere between 15:1 and 20:1. Omega-6 in excess feeds into the body’s inflammatory pathways it’s a precursor to arachidonic acid, which downstream produces pro-inflammatory signaling molecules.

Refined white flour is essentially grain stripped of everything except starch. The fiber is gone, the bran is gone, the nutrients are largely gone. What remains digests almost immediately, hitting the bloodstream as glucose in a rapid surge.

This spike triggers an insulin response, and if it happens repeatedly throughout the day toast for breakfast, a sandwich for lunch, pasta for dinner the body never really returns to baseline. Elevated insulin has direct links to inflammatory cytokine production. Over time, this chronic metabolic stress creates a tissue environment where inflammation is the default state rather than the exception.

What’s particularly insidious about white flour is how invisible it is. It’s not just bread. It’s coatings onfried food, thickeners in soups, filler in sausages. Reading a label and seeing “enriched wheat flour” near the top of the ingredients list is, nutritionally speaking, a red flag wearing a polite disguise.

Added Sugars: The One We Know About But Underestimate

Everyone knows sugar is “bad.” What’s less understood is the mechanism. Sugar, especially in the form of fructose, is metabolized primarily in the liver. When fructose arrives in large quantities as it does from sweetened beverages, flavored yogurts, condiments, and countless packaged snacks the liver converts much of it to fat. This process, called de novo lipogenesis, is linked to elevated uric acid levels, oxidative stress, and yes, systemic inflammation.

High-fructose corn syrup tends to get the most attention here, and rightly so it floods the body with fructose faster than almost any other source. But plain table sugar (sucrose) is half fructose too. The distinction matters less than most people think.

There’s also a behavioral dimension worth noting. Sugar is genuinely habit-forming in the neurological sense. It triggers dopamine release in patterns that make moderation genuinely difficult, not just a matter of willpower. The average American consumes somewhere around 17 teaspoons of added sugar per day more than double what the American Heart Association recommends. It’s not a gap that closes easily.

Trans Fats: Mostly Gone, Not Entirely

Trans fats are also notoriously persistent in the body. They integrate into cell membranes and interfere with the normal function of fatty acids, which disrupts the cell-signaling processes that regulate inflammation. The good news is that the dietary burden has dropped dramatically over the past decade. The bad news is that assuming the problem is solved entirely would be premature.

Artificial Additives and Emulsifiers

This is the category that gets the least mainstream attention, possibly because the research is still developing, possibly because the ingredient names are long and unfamiliar.

Emulsifiers like carboxymethylcellulose and polysorbate 80 are added to processed foods to improve texture and extend shelf life. They’re in ice cream, salad dressings, low-fat dairy products, and commercial baked goods. Animal studies have shown that these compounds can disrupt the gut microbiome and degrade the protective mucus layer lining the intestines the barrier that keeps gut bacteria where they belong.

When that barrier becomes compromised, bacterial fragments can leak into the bloodstream, triggering an immune response. Alcohol occupies a culturally strange position. It’s simultaneously treated as a wellness ritual in some circles and a public health concern in others. The research landscape has shifted considerably in recent years, with multiple large studies challenging the once-popular idea that moderate drinking offers cardiovascular protection.

What’s fairly well established is the inflammatory mechanism. Alcohol is metabolized into acetaldehyde, a toxic compound that triggers an immune response. Chronic intake elevates levels of lipopolysaccharides bacterial endotoxins from the gut in the bloodstream. It depletes antioxidants, particularly glutathione. It disrupts the gut barrier.

None of this means a glass of wine on a Friday evening is a biological catastrophe.
